The Best Simple Sourdough Pasta
You guys have to stop buying storebought pasta and start making it from scratch. It’s so fun to make, so much better for you, and can be used in so many ways. I was always a little intimidated by homemade pasta, but recently I started making this all the time and fell in love with it. This recipe is made with simple, actually clean ingredients, and can be made with active starter and long fermented for even more gut benefits or discard if you’re quickly making it for dinner.
Ingredients
Here’s what you’ll need to make sourdough pasta. This recipe makes enough for 4-6 servings, but can be easily doubled!
150g organic flour (Sunrise Flour Mill organic heritage flour is my favorite, and they have an amazing pasta flour!)
2 pasture raised eggs
5g (ish) sea salt/Himalayan salt
10g high quality olive oil
50g sourdough starter (active if you want to long ferment, or discard can be used too)
Instructions
In a bowl, combine all ingredients and mix will. Remove the dough and knead on the counter for a good 5-10 minutes until the dough is very smooth.
(Note: this can also be done in a stand mixer to make it even easier if you want - just mix for a few minutes until the dough is nice and smooth, then continue instructions as below.)If you’re long fermenting for even more gut benefits, cover or place the dough in a bowl with a lid and let rest on the counter for a couple hours (you can even put in the fridge after this point and continue an extended fermentation if you want). If you’re making and cooking the pasta in the same period using discard, move right along to the next step.
Divide the dough into a few sections. Dust your counter with flour and begin rolling each section of dough out. You want the dough pretty thin (when you can see light through it that’s a good indicator).
Shape and cut as desired from here. If you’re using a pasta attachment/roller, you can run the dough through there for whatever type of pasta you’re making as well. Make sure to flour as you go as needed so it doesn’t stick to each other.
Bring a pot of water to a boil. Salt the water, then add in all your pasta. Boil for about 4 minutes (fresh pasta doesn’t take as long as dried storebought pasta!).
